Cubed Fruit

Letter

Cubed fruit is fruit that has been cut into uniform geometric pieces of a defined dimension before freezing or drying, enabling consistent dosing, even processing and predictable appearance in the finished product.

In trade practice

Cut size is agreed between buyer and supplier at the specification stage and verified by QA teams using sieve or manual measurement checks on arrival. Common applications include bakery fillings, dairy preparations, fruit mixes and confectionery, where dimensional consistency affects both process efficiency and visual quality. Suppliers must ensure that cutting equipment is calibrated and that knives are changed at defined intervals to prevent ragged edges that increase surface area and accelerate moisture loss or oxidation. A frequent non-conformance is a high proportion of undersized pieces resulting from fruit that was too soft or insufficiently frozen before cutting.

In a specification

The product specification should state the nominal cube dimension, the permitted tolerance on each axis and the maximum allowable proportion of pieces outside that tolerance, expressed as a percentage by weight.
