Brix (°Bx)

Brix (°Bx) is a unit expressing the amount of soluble solids — mainly sugars — in a water solution, measured with a refractometer. In fruit sourcing, Brix indicates ripeness and sweetness, and buyers set minimum Brix values for purees and juices to guarantee flavour intensity and batch consistency. For honey, the refractometric reading is converted into moisture content, which is critical for fermentation stability.
