Why are kidney beans colour sorted?

Short answer

Kidney beans are one of the crops where pulse colour sorting earns its capital cost several times over. The reasons are partly cosmetic and partly a matter of food safety.

The visual argument

Kidney beans are sold on appearance to a degree that few other pulses are. A dark red kidney bean is expected to be uniformly deep red with an intact, glossy seed coat. Weathering in the field bleaches the coat and produces mottled, pale or streaked seed. Rain during the drying-down window causes coat splitting and darkening at the hilum. None of this is a safety issue and none of it affects nutrition, but a canner or a retail packer will reject the lot because the discolouration survives cooking and is plainly visible in the can or the pack.

Mechanical cleaning cannot solve this. Aspiration, size grading and gravity separation all work on dimension, aerodynamics and density — properties in which a bleached bean is identical to a good one. Only an optical machine that reads reflected colour can separate them.

The safety argument

The second job is removing what should never have been in the lot. Optical sorting heads fitted with near-infrared channels and shape analysis reject:

  • Stones and clods that survived destoning because their density happened to match the bean
  • Glass and light-coloured plastic, which the visible-light channel sees as a colour anomaly
  • Insect-damaged seed, identified by the dark bore hole
  • Mould-affected seed, which reads as a discrete dark or grey patch
  • Foreign seed, including other bean classes and volunteer cereal

The insect and mould rejects matter because both correlate with quality problems that are not visible from the outside of a bag: bore holes indicate a live or recent infestation, and mould patches raise the question of what else the lot has been exposed to.

Why kidney beans specifically

Raw kidney beans naturally contain a lectin that is destroyed by proper cooking, so the cooking instruction on the pack is a genuine control point. That makes the visual integrity of the product part of the consumer safety message: a bean that looks damaged invites the consumer to assume something is wrong with the whole pack. Processors therefore hold kidney bean cosmetic specifications tighter than they hold, say, split red lentil specifications.

Where it sits in the line

Colour sorting is the last mechanical operation before polishing and packing. Running it early wastes capacity on material that gravity and screens would have removed anyway; running it last means the sorter sees a clean, uniform stream and can be set aggressively without losing good product.
