Root Vegetable Chips

Letter

Root vegetable chips are thin-sliced, fried, baked or vacuum-fried snack products made from vegetables such as beetroot, carrot or parsnip, and they matter in trade because slice consistency, oil content and colour stability must all be controlled to meet retail specifications.

In trade practice

Processors set slice thickness tolerances and monitor oil uptake and moisture content at production. Vacuum frying is used to preserve natural pigments and reduce acrylamide formation compared with conventional frying. Buyers specify colour using visual reference scales or colorimetry, and incoming lots are checked for broken pieces, off-colour slices and foreign material. Organic certification is increasingly requested for retail lines, requiring segregated raw material sourcing and documented chain of custody.

In a specification

A specification for root vegetable chips should state the permitted species, slice thickness tolerance, maximum broken-piece percentage, oil content range and colour acceptance criteria, along with packaging format and shelf-life requirements.
