Ochratoxin A is a mycotoxin produced by certain Aspergillus and Penicillium moulds on improperly dried or stored grains, dried fruit, coffee and other products. It is nephrotoxic and regulated in the EU under Regulation (EU) 2023/915. Prevention centres on rapid drying, low storage humidity and monitoring.
