Nut storage is the controlled holding of in-shell nuts or kernels under conditions of low temperature, low relative humidity and darkness to prevent mould growth, insect infestation and oxidative rancidity during the period between processing and shipment.
In trade practice
Warehouses used for nut storage are monitored continuously for temperature and relative humidity, with records available for buyer or auditor review. Lots are stacked on pallets away from walls to allow air circulation, and pest control programmes are documented as part of food safety management. A common error is storing nuts alongside strongly scented commodities, which can cause odour taint. Temperature and humidity logs form part of the documentation package presented at export.
In a specification
A contract may specify maximum storage temperature and relative humidity, require continuous monitoring records and set a maximum storage duration before shipment.
