Antinutritional Factors

Letter

Antinutritional factors are naturally occurring compounds in pulses, such as phytates, tannins, lectins and trypsin inhibitors, that reduce nutrient availability or digestibility. Processing steps including soaking, dehulling, heat treatment and fermentation significantly reduce their levels.
