Winterization

Letter

Winterization is an oil refining step in which oil is chilled slowly to crystallise waxes and high-melting saturated fats, which are then filtered out to prevent cloudiness or sediment forming at low storage temperatures.

In trade practice

In sunflower oil processing, winterization is applied after degumming and neutralisation. The oil is cooled gradually in tanks, held at low temperature to allow wax crystals to form, then filtered under controlled conditions. Buyers of bottled or food-service sunflower oil typically require a cold test result, where the oil is held at a defined temperature for a set period and assessed for clarity. Omitting winterization from crude or lightly refined oil supplied for retail use is a common quality failure that causes consumer complaints.

In a specification

A refined sunflower oil specification may include a cold test clause requiring the oil to remain clear after a defined chilling period, confirming that winterization has been carried out effectively.
